Et il faut prendre une décision : soit on le jette à la poubelle, soit on en fait ... de la meringue ? Des financiers ? Mais qu'est-ce qu'on peut bien faire avec un seul blanc d'oeuf ?

Eh bien j'ai trouvé la recette parfaite pour se débarrasser d'un blanc : des langues de chat sans gluten - un minimum d'effort pour un maximum de résultat. Tout ce qu'il faut c'est un blanc d'oeuf, 50g de beurre, 50g de sucre et 50g (environ) de farine pour avoir une vingtaine de biscuits délicieusement fins et craquants similaires à ceux de notre enfance (vous vous rappelez cette époque quand vous pouviez encore manger du gluten ? On y est.).

Well I found the perfect recipe for gluten-free langues de chat biscuits -literally "cat's tongue"where you have to use one egg white and it's minimum effort, maximum results. All it takes is one egg white, 50g butter, 50g sugar, 50g (or so) flour and you get about 20 deliciously thin and crispy biscuits so very similar to the French classics you had in your childhood (remember that time when you could still eat gluten? Well, that's it).

Cela ne prend que quelques minutes dans le four pour avoir ces ravissants bords ambrés et ils sont si rapides à préparer que vous vous retrouverez à en faire dès qu'il vous reste un blanc d'oeuf au frais !

It only takes a few minutes in the oven to get that gorgeous brown edge and they're so easy to make you will want to make them any time there's one egg white left in your fridge!

GLUTEN-FREE LANGUES DE CHAT BISCUITS / CAT'S TONGUE BISCUITS

50g butter
50g icing sugar, sifted 
1 egg white
40g brown rice flour
15g potato starch
1/2 tsp vanilla extract

Preheat oven to 200°C and line one baking tray with baking parchment.
Melt butter in a pan. Whisk butter and sugar together. Add the egg white, vanilla extract. Whisk again before adding the flour and potato starch. Your dough should be pale and smooth.
Pipe with a small round nozzle  (~1cm) onto the baking parchment, leaving space between each biscuit as they will spread while cooking.
Bake for about 7min or until golden-brown around the edges.
