Gaufres au levain {sans gluten}


Vous savez que je fais mon propre pain au levain sans gluten (clic pour la recette). Comme je conserve mon levain de pain en pain, je me suis dit que cela pouvait être sympa de proposer d'autres recettes pour l'utiliser.

You know I bake my own gluten-free sourdough bread (click here to see the recipe) and as my sourdough stater keeps on giving I thought it would be nice to offer some other recipes that call for for it.



Je conserve habituellement mon levain au frigo, si ce n'est quand j'ai besoin de le rafraîchir. Une fois que je l'ai rafraîchi avec de la farine et de l'eau fraîche, j'attends qu'il se mette à buller puis je le replace au réfrigérateur.

I keep my starter in the fridge most of the time except when I have to feed it. Once I've fed it with some flour and water, I wait for it to bubble up again and return it back to the refrigerator.


Alors voici comment vous pourrez l'utiliser: des gaufres au levain sans gluten ça vous dit ? Le procédé est le même que pour ma recette de pain au levain sans gluten. En gros, vvous préparez votre levain la veille et faites cuire les gaufres le lendemain matin. Vous allez attraper votre levain, le remuer, prélever la quantité nécessaire pour la recette et le place dans un saladier, puis nourrir le reste et le replacer au frigo.

So here's how you could use your starter: gluten-free sourdough waffles anyone? Process is the same as for my sourdough bread recipe. Basically, you prepare your starter the evening before and cook the waffles the following morning. You will stir your cold starter, measure out the amount the recipe calls for, place it in your bowl, feed the remaining starter and place it back in your fridge.



Vous allez laisser le levain que vous avez prélevé à température ambiante toute la nuit et réaliser le reste de la recette le lendemain. Je vous assure que ces gaufres peuvent ensuite être faite dès que vous voulez et elles seront prêtes rapidement pour que vous les savouriez au petit-déjeuner ! Elles sont légères et croustillantes et je les apprécie avec un topping de fruits... mais elles seront tout aussi délicieuse avec de la pâte à tartiner noisette-chocolat si vous voulez en faire une version plus gourmande!

You will keep the amount of sourdough you measured out at room-temperature overnight and process to rest of the recipe the following day. I assure you those waffles can be made straight away when you wake up so they should be ready for breakfast in no time! They are light and crispy and I like topping mine with fruits... but they are perfect with some hazelnut and chocolate spread if you want to make it extra-special!


GAUFRES AU LEVAIN SANS GLUTEN

Pour 4 gaufres 
A préparer la veille :

50g farine de riz
30g arrow-root
90g lait d'amande ou lait de riz
Le jus et le zeste d'1/2 citron bio
1/2 CS de sirop d'agave
1 oeuf
1 CS 1/2 d'huile de coco fondue
1/2 cc d'extrait de vanille
1/2 cc de bicarbonate de soude
1/4 cc de sel de l'Himalaya

La veille au soir : mélanger ensemble le levain, la farine de riz, l'arrow-root, le lait d'amande ou de riz, le jus de citron et le sirop d'agave. Couvrir d'un film plastique et laisser reposer à température ambiante pendant 8 à 12 heures.
Le lendemain matin, mettez votre gaufrier à chauffer. Pendant ce temps, ajouter le zeste de citron, l'oeuf, l'huile de coco fondue, l'extrait de vanille, le bacarbonate et le sel à votre mélange de la veille. Fouetter pour incorporer, le mélange va commencer à buller.
Graissez votre gaufrier avec de l'huile de coco et y verser une partie de la pâte. Cuire jusquà ce que ce soit bien doré, retirez la gaufre et laisser de côté le temps de cuire toutes les autres gaufres.
Servez chaud avec des fruits frais, du sucre glace, du sirop d'érable ou d'agave ou de la pâte à tartiner chocolat-noisette.


GLUTEN-FREE SOURDOUGH WAFFLES

For 4 waffles
To prepare the night before:

50g rice flour
30g arrow root
90g almond or rice milk
Juice and zest of 1/2 organic lemon 
1/2 Tbsp agave syrup
1 egg
1 1/2 Tbsp melted coconut oil
1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp himalayan salt

In the evening, whisk together the sourdough starter + rice flour + arrow root + vegan milk + lemon juice + agave syrup. Cover the bowl with plastic film and let it sit at room temperature for 8 to 12 hours.
The following morning, preheat your waffle iron. Add the lemon zest, egg, melted coconut oil, vanilla  extract, baking soda and salt to your mixture. Whisk until combined. It will start to bubble.
Grease your waffle iron with coconut oil and pour in your part of your batter. Cook until golden brown and set aside until all your waffles are cooked through.
Serve hot with fresh fruits, icing sugar, agave or syrup or chocolate spread.

Et je peux vous dire que maintenant que j'ai élaboré cette recette de pâte à pizza sans gluten au levain, manger une bonne pizza ne va plus jamais me manquer !

Ok so now I've found my gluten-free New York Time-ish cookie recipe I've decided to tackle another "how I miss it so" gluten-free recipe: pizzaaa!! And I can tell you now I've developped my own gluten-free sourdough pizza dough recipe, I will never envy the usual pizza anymore.

Pour cela, j'utilise le même levain que pour mon pain sans gluten au levain. J'ai toujours un levain de prêt au frigo, ce qui est très pratique quand je veux faire un pain ou une pizza. Je n'utilise plus du tout de levure, ma boulange est désormais 100% levain et c'est tellement mieux comme ça !

I use the same sourdough as the one in my Gluten-free Sourdough Bread recipe. I always have a bowl of sourdough ready to use in my fridge so it comes in handy whether I want to bake some bread or a pizza. I never use yeast anymore, it's always 100% sourdough and it tastes so much better that way!

J'ai déjà réalisé plusieurs pizzas et bien que la recette initiale comporte du sarrasin, il est tout à fait possible de le remplacer par votre farine préférée.  J'ai essayé avec du millet et c'était très bien !

I've made numerous pizzas and though I wrote the initial recipe with buckwheat, you could easily swap the flour for another of your favorite. I tried millet and it worked well!

Par ailleurs, j'aime bien varier les garnitures : la pizza qui figure sur les photos a une base de coulis de tomate, coppa, chèvre, noix, roquette, miel et olives noires. J'aime bien aussi les toutes simples genre margherita ou encore avec des pimientos et du chorizo. Le tout étant de ne pas lésiner sur la qualité des ingrédients que vous choisissez ! Une pizza avec peu d'ingrédients mais bien choisis sera bien meilleure qu'une pizza couverte d'ingrédients de second-choix.

Also, I like to try various toppings, so the one on the photos is basically passata, coppa, goat's cheese, walnuts, rocket, honey and black olives. I also enjoy some very simple pizza such as margherita, or pizza with pimientos and chorizo. The most important thing is the quality of the ingredients you choose to put on! A pizza with few first-class ingredients will taste way better than a pizza covered with second bests ingredients.

GLUTEN-FREE PIZZA DOUGH

50g potato starch
50g corn starch
100g rice flour
50g buckwheat flour
50g sourdough
110g water
1 Tbsp oil

In a bowl, mix together the flours and starches. Add water and oil. Mix well with your fingers or with a wooden spoon. Leave to rest in the bowl covered with clinged film in a warm room for app. 3hrs.
Spread the dough with your fingers leaving the edges a bit thicker so the dough will rise.
Leave aside for another 30min then bake in oven preheated to 200°C, until the dough no longer shines.
Cover with your ingredients and bake for another couple of minutes.

Depuis que j'ai arrêté le gluten, j'ai fait de nombreux pains : des pains à la farine de châtaigne, des pains aux graines, des pains à la farine de riz... Ils contenaient tous de la levure et étaient plutôt plats, ou faits dans des moules à cake.

S'ils étaient bons, ils n'avaient que peu de choses en commun avec le pain français habituel ou les baguettes. Je m'y suis habituée, et j'ai eu mes succès, mais je ne me suis jamais sentie entièrement satisfaite avec ces recettes de pain sans gluten maison.

Ever since I started eating gluten-free, I've baked a lot of different breads; chestnut flour breads, seeded breads, white rice flour breads... They all contained yeast and were either flat or looked like a loaf cake. 

They tasted good but had barely a thing in common with our traditionnal French bread or baguette. I got used to eating those and though I enjoyed some success I never felt quite satisfied with home-made gluten-free bread.

Cela faisait un moment que j'avais envie de m'essayer au levain sans gluten, donc quand j'ai vu comme le levain sans gluten de Makanai avait l'air facile, il a fallu que je m'y essaie.

That was until I saw Aurélie Carvalho's gluten-free  sourdough bread... How was it possible to make such a good looking gluten free bread? I've been wanting to try my hands at gluten free sourdough starter for a while, so when I saw how easy Makanai's gluten free sourdough starter seemed to be, I had to give it a try.

Cela demande un peu d'organisation mais cela est tellement facile ! Je me suis servi du levain sans gluten pour faire le pain aux graines au levain sans gluten de Thea Tillberg : cette recette est extraordinaire ! Le résultat est ce qu'il y a de plus proche d'un pain artisanal traditionnel. Vous n'auriez jamais deviné que ce pain est sans gluten ! Enfin, c'est ce que des gens qui ne mangent pas sans et qui l'ont goûté ont dit ! Il a toutes les qualités d'un pain au blé classique : la croûte est croquante, le pain ne s'effrite et ne sèche pas, et, encore plus surprenant, il a l'élasticité d'un pain au blé mais sans les effets secondaires du gluten !

It takes a bit of organization but I can't believe how easy it is! I used my gluten free sourdough starter to make Thea Tillberg's seeded gluten free sourdough bread; that recipe is just incredible! The result is the closest to traditionnal artisan bread - you could never have said that this bread is gluten free! At least, this is what not-free-from people who had it said ;-) It has all the qualities of a classic wheat loaf; the crust is crispy, the bread doesn't crumble nor dry out and amazingly enough it has the elasticity of a wheat bread without the side effects of gluten!

C'est de loin le meilleur pain que j'ai réalisé, donc voici la recette telle que je l'ai faite. Démarrez votre levain à la farine de riz et de sarrasin 5 jours en avance, et votre pain le 4è jour. Je vous conseillerais de préparer votre levain en soirée, comme ça votre pain sera prêt le 5è jour dans l'après-midi. Vous devriez avoir assez de levain pour doubler les quantité de la recette du pain au levain sans gluten et faire 2 gros pains.

So far this the best bread I ever made so here I share the recipe as I made it. Start your rice flour and buckwheat flour sourdough starter 5 days ahead, and your gluten free sourdough bread on the fourth day. I would recommend you make your sourdough in the evening so your bread should finally be ready on the 5th day in the afternoon. You should have enough sourdough to double up the quantity of gluten free sourdough seeded bread recipe and make 2 big loaves.

EDIT DU 26/06/17 : après avoir fait ce pain une bonne dizaine de fois, j'ai adapté la recette et modifié la quantité d'eau pour le levain, la quantité d'eau pour le mélange au psyllium et la quantité de graines de lin dans le mélange de poudres. Cela peut varier en fonction des marques de farines que vous utilisez, de l'humidité ambiante, de la température... à vous ensuite de trouver ce qui vous convient.

EDIT 26/06/17: I've made this bread a dozen times now so I adapted the recipe a little and changed the quantity of water for the sourdough starter and also for the psyllium mix and I changed the quantity of linen seeds for the flour mix. It might depend on the flour brands you use, humidity or temperature... so you might find what suits you best.

GLUTEN FREE SOURDOUGH STARTER

3 times:
23g brown rice flour
23g buckwheat flour
64g water

To do in the evening, 5 days before the day you want your bread to be ready.

Day 1: mix 23g rice flour with 23g buckwheat flour and 64g water (at room temperature) in a glass bowl with a wooden spoon. Cover with a plate and leave to room temperature.

Day 2 : at about the same time, add 23g rice flour, 23g buckwheat flour and 64g water and miw again with a wooden spoon. Cover.

Day 3 : do as day 2 again.

SEEDED GLUTEN FREE SOURDOUGH BREAD

80g rice flour
140g sourdough starter
110g water

Liquids:
10g flax seeds
20g psyllium husk
350g water

Dry:
60g oat flour
60g buckwheat flour
60g corn starch
60g potato starch
20g flax seeds
20g sesame seeds
20g sunflower seeds
10g chia seeds
24g powdered sugar
1tbsp salt

Day 4: In a bowl with a wooden spoon, mix sourdough starter with flour and water. Cover with clingfilm and let sit overnight at room temperature for 8 to 12 hours.

Day 5: In the morning, in another bowl, mix ground flax seeds with psyllium and water. Let sit until a thick gel forms then add your sourdough.

Mix all dry ingredients together in a separate bowl. Make a well in the middle to add liquid ingredients. Whisk with electirc mixer with dough hooks until the flour is fully incorporated.

Flour your surface and shape the dough into a loaf. Flour one tea towel, cover your tin with towel and put your dough into it. Fold your towel over your loaf and place your tin in a plastic bag. Allow to rise 4 to 6 hours in a switched off oven.

Preheat oven to 200°C with a baking pan inside and a small bowl of water. Flip the dough upside down onto parchment paper, score the bread and transfer to your hot baking pan.

Cover your bread with tin foil and bake for 40min then another 20min without the foil.

Leave to cool before you slice the bread.
