Je n'ai jamais eu la chance de goûter une part de Banoffee Pie du temps où je mangeais encore du gluten. Alors quand Emilie m'a dit qu'il s'agit de l'un de ses desserts préférés, j'ai pensé que ce serait parfait pour notre session de photographie culinaire.

I never had the chance to eat a slice of Banoffee Pie before I turned gluten-free. So when Emilie told me it was one of her favourite desserts, I thought it would be perfect for our food photography shoot.

A vrai dire, la banane dans une tarte n'a jamais eu pour moi le moindre attrait, ni même la confiture de lait (ma préférence allant au caramel au beurre salé) mais je dois dire que j'ai totalement changé d'avis à la première bouchée. Ce n'était pas du tout lourd ou étouffant... au contraire, la crème était si légère et la pâte si fine que c'était un délice en bouche !

To say the truth, banana in a pie didn't sound that exciting to me, nor was dulce de leche (my long time favourite is salted caramel sauce) but I have to say I totally changed my mind when I had my first bite. It wasn't too filling or heavy at all. On the contrary, the cream is so light and the pie crust so thin it feels like heaven in my mouth!

En plus, c'est une recette facile à faire sans gluten. Il suffit d'acheter des biscuits sans gluten, c'est tout ! Cela dit, prévoyez un certain temps pour faire la confiture de lait (vous pouvez aussi bien l'acheter toute prête dans le commerce mais c'est tellement plus satisfaisant de la faire soi-même) et pour laisser réfrigérer. Vous pouvez bien sûr manger une part dès que la tarte est prête mais je trouve cela meilleur quand tous les éléments sont bien frais. Alors préparez votre base et votre garniture avant, et assemblez et savourez le jour même !

On the plus side, it is very easy to make a gluten free version of this recipe. You just have to buy gluten-free biscuits and that's all! However, you should allow a certain time to make the dulce de leche (you might as well buy it but it tastes so much better when you make your own) and to let it sit in the refrigerator. You could have a slice straight away but I feel it tastes better when cold. So prepare the base and filling ahead, and enjoy and assemble on the day!

BANOFFEE PIE

Adapted from Trish Deseine

For a 22cm pie:
150g biscuits+75g salted butter
2 bananas
1 can sweetend condensed milk
30cl heavy fleurette cream
2 Tbsp mascarpone
Cocoa powder
1 pack whipping cream powder

To make the dulce de leche: place the can in a pan filled with boiling water. Let it simmer for 3h adding water from time to time. Let it cool before you open the can. Mix if you want a smooth texture.
Crush the biscuits into crumbs then combine with melted butter. Spoon into the base of the tin and chill for 1h.
In a bowl, whip the cold cream to soft peaks then add 2tbsp of mascarpone and the whipping cream powder.
Now assemble your pie: arranged your sliced bananas on your pie base. Top with dulce de leche and spoon your whipped cream over. Dust with cocoa powder. Serve cold.
