J'ai fait ce gâteau pour mes collègues de travail. J'ai fait ce gâteau pour ma famille à mon anniversaire. Et je vous le dis : c'est une recette inrattable que tout le monde apprécie ! Enfin, tant que l'on aime le chocolat.

En plus d'être extrêmement fondant et savoureux avec ses gros morceaux de chocolat, ce gâteau est d'une simplicité enfantine à réaliser et vous pouvez même le préparer en avance - je veux dire : il faut le faire à l'avance. Plus il restera au frais, meilleur il sera !

Ce fondant au chocolat est une recette de gâteau au chocolat sans gluten si facile : un saladier et une cuillère en bois est tout ce dont on a besoin. Faites-le un jour avant, mettez le au frigo, oubliez-le (probablement le plus difficile à faire), puis coupez en carrés et servez !

Note : j'utilise habituellement du chocolat à pâtisserie à 52% de cacao et je trouve que la farine de maïs (je la prends toujours bio) fonctionne bien pour ce genre de gâteau, mais n'importe quelle farine fera l'affaire.

This melt-in-your-mouth chocolate cake is such an easy gluten-free chocolate cake recipe. One mixing bowl and one wooden spoon is all it requires. Make it a day ahead, put it in your fridge, forget about it (probably the most difficult part here), then cut it into squares and serve !

Note: I usually use dark cooks' chocolate of around 52% cocoa solids when I bake and I found that corn flour (I always choose organic corn flour) works well but any type of flour would do.

EVA'S CHOCOLATE CAKE

To make the day before
For a 23cm square tin

200g chocolate
200g butter
130g sugar
5 eggs
1Tbsp corn flour
100g chocolate chunks
1/4tsp fine sea salt

Melt the chocolate with butter using a bain-marie (a bowl over a pan of simmering water).
Add sugar, stir and let the mixture cool a little before you add the eggs, one at a time, stirring thoroughly between each egg. Fold in the flour, mix well and add salt and chocolate chunks.
Turn into tin and cook in oven preheated to 180°C until middle of the cake is set (it should not be wobbly and don't worry it is still going to be melty).
Leave to cool before turning out the cake. Refrigerate before you serve.
