Cela fait longtemps que j'aurais dû publier cette recette de cake marbré chocolat-potiron mais vous savez, il y a eu Noël, puis le nouvel an et nous voilà en 2017. Alors ce sera ma première recette de l'année !

I should have posted this Chocolate-Pumpkin Swirl Cake recipe long ago but you know, Christmas came in then it was New Year's Eve and here we are in 2017 with the first recipe of the year!

Dans ma quête pour réduire le sucre, je compense SOUVENT en utilisant des fruits et légumes pour sucrer naturellement mes gâteaux. Les "pumpkin cakes" ont l'air de faire partie intégrante de la cuisine américaine, mais ce n'est pas du tout le cas de ce côté de l'Atlantique, et cela peut même faire bizarre !

In my attempt to control my sugar intake, I've been relying A LOT on using fruits and veg to naturally sweeten my cakes. Pumpkin cake seems like a staple in American cooking. But on this side of the Atlantic, it isn't at all and might as well sound a bit weird!

En fait, j'ai fait ce gâteau pour l'apporter lors d'un dîner chez des amis et nous l'avons mangé pour le dessert. Je n'ai pas dit un mot sur l'ingrédient "secret" avant qu'ils n'aient pris leur première bouchée. Ils ont senti les épices, apprécié la texture extrêmement moelleuse de leurs parts et les marbrures de chocolat.

Truth is, I brought this cake at a friends' for diner to eat as a dessert - and didn't say a word about the 'secret' ingredient until they had their first bites. They could taste the spices, appreciated the extra moistiness of the slices and the swirls of chocolate.

Puis il est devenu évident que je devais leur dire de quoi ce cake marbré était fait. A leur grande surprise -et à la mienne- la citrouille n'a pas eu l'air aussi bizarre : nous en avions eu en plat et c'était donc comme un thème à ce repas et tout le monde a aimé le marbré !

Then it became obvious I had to tell them what this marbled loaf was made of. To their surprise -and mine- pumpkin didn't sound that weird; we had it as a main so it was sort of a theme to our meal and everyone loved it!

PS : pour cette recette, je préfère utiliser du potimarron mais vous pouvez, dans l'absolu, utiliser la purée de courge que vous voulez. C'est un gâteau extrêmement moelleux, dense sans être lourd. Il se conserve très bien pendant plusieurs jours et semble ne jamais dessécher !

PS: I like to use Red Kuri Squash for this one but you can virtually use any type of squash. It's an extremely moist cake, dense like it should be but not too heavy. It will keep well for several days and never seem to dry out.

CHOCOLATE-PUMKIN SWIRL CAKE

2 eggs
80ml rice cream
120ml oil
80g brown sugar
150g rice flour
75g millet flour
2tsp baking powder
100g dark baking chocolate
300g red kuri squash
1tsp cinnamon
1/2tsp ginger
nutmeg

Dice squash, steam cook until soft then mash.
In a bowl, mix eggs, cream and oil. In another bowl, mix together sugar, flours and baking powder. Stir bowl two into bowl one and remove half of the batter to separate bowl. Fold 100g melted chocolate into one bowl and squash purée and spices into the other.
Alternately drop spoonfuls of batters into loaf pan. Gently swirl batters with a knife to create a marble effect. 
Bake in 180°C oven for app. 40min.

L'automne est probablement ma saison préférée. Pendant des années, mon cœur a balancé entre le printemps et l'automne. Mais il semble que j'en sois finalement arrivée à cette conclusion : c'est bien l'automne que je préfère, et ce sera toujours elle.

Autumn probably is my favourite time of year. I've been unable to choose between spring and autumn for several years but it seems I've finally come to that outcome: autumn it is, and autumn it will be.

L'une des choses que je préfère à l'automne, c'est la variété des courges : la classique citrouille, la douce butternut, le savoureux potimarron – cette année, j'ai même testé le patidou, mais ce sera pour une autre recette.

One of the things I love most about autumn is the variety of squash: the usual pumpkin, the creamy butternut, the tasty Red Kury -and this year I've even inquire into sweet dumpling but that's for another recipe.

Ma soif d'expérimentation et ma quête de nouvelles recettes m'a amené à réaliser ces mini tartes sans gluten au potimarron. La pâte au parmesan fait des merveilles associée à la douceur du potimarron tandis que l'ajout de roquette et de graines de courge grillées parachèvent la recette.

So my never ending thirst for experimenting and developing recipes led me to this Gluten-Free Red Kuri Mini Pies. Parmesan crust works wonderfully with the sweetness of squash while the topping of rocket and roasted pumpkin seeds makes it complete.

You will love the delicate squash mixture and no-one will guess this is a gluten-free crust. Which means this recipe is worth sharing!

RED KURI SQUASH MINI PIES (GF)

For 5 small pies

For the dough :
150g rice flour
70g organic corn flour
70g organic corn starch
30g parmesan
120g butter
1 egg
4 tbsp cold water

Mix flours and starch together. Add parmesan and grated butter. Mix egg with water and add to the other ingredients. Mix until a soft ball forms. Wrap with cling film and refrigerate for 30min.
Place in prepared pie tins and refrigerate for another 30min.


For the mixture (GF, DF):
275g red kuri squash puree (app. half a squash diced, steamed and mixed)
2 eggs
125ml soya cream
1/2tsp nutmeg
salt, pepper

Preheat oven to 160 celsius degrees and cook pie dough for 30min.
Meanwhile, mix all remaining ingredients together. Pour mixture into tins then bake for another 30min, 180 celsius degrees temperature.

Serve with fresh rocket and roasted pumpkin seeds (to roast seeds, place in hot oven for 12min).
